Coffee Brined and Grilled Chicken

I have been marinating chicken all my cooking life. It was only recently when I discovered the joys of brining, then I realized WHAT I have been missing all these years.

Brining is a beautiful cooking technique which will make a huge huge difference to your chicken.The process of brining  keeps the chicken plump and moisturized. The result will be , trust me, amazing. If you have never tried brining chicken, do give it a try. It’s absolutely worth it and I am sure you will thank me for it.

The two must ingredients in your brine would be salt and sugar. You can add or remove any other ingredients to suit  your taste. I have brined this chicken with coffee. It gives a beautiful flavor to the chicken and was an absolute hit.

First things first:

  • A quart of water
  • 1/4 cup sea salt
  • 1/4 cup brown sugar
  • One whole lemon sliced
  • 1 tbsp. black peppercorns
  • 1 tbsp. coriander seeds
  • A sprig of rosemary or thyme or any herb of your choice
  • 1/2 cup strong coffee/1 tsp. instant coffee

Heat a cup of water from the quart and add the salt and sugar. Stir till dissolved. I prefer sea salt but you can use table salt.Brown sugar gives a nice caramelized finish to the chicken.Cool it and add the rest of the water and the ingredients. Put in 4-5 chicken breasts and put a weight on it so that the chicken remains submerged. Leave in the refrigerator for at least 4 hours.

Remove chicken from the brine and discard the brine solution. Rinse the chicken well. Pat dry and season according to choice. I don’t add salt coz it will  be salty enough. I added paprika powder, lemon juice, garlic paste. Brush with a little butter and sprinkle some red chilli flakes and dried oregano herbs.

Grill on hot coals or in your electric grill. Enjoy moist, juicy succulent grilled chicken like never before.

  2. Your recipe indicates ½ cup strong coffee/1 tsp instant coffee. Do you mean both or one? I brined turkey breast at Thanksgiving and it was amazing. Thank you for this recipe.

      I meant anyone of them. Either you brew half a cup of coffee without milk and add it to the brine or just add a teaspoon of instant coffee to the hot water in which you have dissolved the salt and the sugar.

    A lovely recipe. Wonderfully different to use coffee but it has a lovely subtlety here and does give lovely notes to the overall flavour.
