Eid Mubarak to all my friends and readers who have been fasting for the entire month and are now celebrating Eid. Eid ul Fitr marks the end of Ramadan, the holy month of fasting. Muslims fast for three main reasons :

  1. To receive God’s mercy
  2. To self reflect and remove their undesirable habits in order to encourage peace, compassion and humility.
  3. To bond with humanity and experience the suffering of the majority of people on the planet who can’t afford two square meals a day.

This is not only a period of physical restraint but also a detox of the mind, body and soul. So many are the benefits of fasting that I have seen so many non muslims fasting along with their muslim friends.

I have made these crunchy chicken parcels stuffed with chicken in a cheesy white sauce. It is absolutely delicious and must be given a try. I love sweet corn and try to include them in most of my recipes. 

 

Filling:

  • Boiled and shredded chicken 2 cups
  • Boiled or steamed sweet corn kernels 3/4 cup

 

Get the White sauce right:

  • Butter                                                    2 tbsp.
  • All purpose flour                               2 tbsp.
  • Milk                                                        1-2 cups 
  • Salt                                                           to taste
  • Pepper powder                                   to taste
  • Oregano (dried)                                 1 tsp.
  • Cheese cubes                                           2

Melt the butter in a pan. Add the flour and saute lightly. I would ideally use half the amount of butter. Add the milk and cook till a smooth thick consistency of sauce is formed. Add the seasonings and  grated cheese. 

Add the shredded chicken and boiled or steamed corn. If the filling looks runny, put on heat and cook till it becomes thick.

Keep aside to cool.

 

For the covering:

Take two pastry sheets and place them in such a way so that they form a plus  +  . Now put a heaped teaspoon of the filling on the center and fold each side alternatively over the filling.Make ribbon cuts on the last two sides and weave. Secure with a sticky paste made of flour and water.

Here, I have to admit candidly that I forgot to take pictures while I was folding the Filo pastry sheet. So the technique I have demonstrated above is with paper sheets.

 

Deep fry in oil and serve.

I have to share the credit of this recipe with my sister-in-law (my brother’s wife ) who first made this. I tweaked  and twisted this a bit and added some weaving for fun .
