Chocolate and Hazel Nut Cookies – deliciously chewy

Christmas time especially 23rd December makes me nostalgic. I did my schooling from a girls convent run by Christian Sisters. Every year on the 23rd, before the school closed for the winter vacation a Christmas play was enacted  . As I was one of the tallest girls in class   😀  I got to play the role of the King ( from The Three Kings/Wise men)for two consecutive years. The third year, when I was in tenth grade, I was promoted 😀  I got to play the role of ‘Joseph’. The school principal at the time was Sister Lucy who was particularly fond of me. At the end of the play, she would meet me back stage with her Santa  and his big bag of little gifts. She almost always asked me to pick the gift of my choice from the bag first. And I still can’t forget the happy smile on my principal’s face when I picked up something  ( happy to see me happy maybe). More than the gift, it was the privilege of being the only student to be given a choice which really made me happy. I still treasure those beautiful memories.

FFwd to 2014: Our wonderful Christian friends invite us every year to the Christmas party. It is high time I start packing some gifts for them. Besides buying some interesting and useful gifts from the store, I have decided to bake some delicious chocolate cookies and add them to the hamper(for that special personal touch) .

     Chocolate and Hazel Nut Cookies


 

This recipe yields deliciously soft,goooey and chewy chocolate cookies.

What you Need:

  • 125 g chocolate chips ( semi sweet and/or milk)
  • 100 g butter
  • 1 egg
  • 75 g brown sugar
  • 110 g plain flour
  • 2 tbsp. cocoa powder
  • 1/2 tsp. baking soda
  • 50 g chopped hazelnuts
  • 2-3 drops vanilla or chocolate essence
  • pinch of salt

What to do:

  1. Cream the butter and sugar till well mixed and fluffy.
  2. Add the egg, salt and essence. Beat well.
  3. Sieve flour, cocoa powder and baking soda together.
  4. Add the flour mixture to the butter and blend together.
  5. Finally fold in the chocolate chips and the nuts
  6. Preheat the oven to 350° F
  7. Line a baking sheet with parchment paper.
  8. Drop heaped teaspoonful of dough with enough space between two such on the baking sheet.
  9. Bake for 8-10 minutes till the the edges of the cookies are golden but the center is still soft.
  10. Cool on a wire rack.

Soft and deliciously chewy cookies are ready to be  devoured  packed and gifted to your friends.Well, when you are talking of friends my FF friends are my essential weekly party buddies.   2. Oh these look lovely and I can tell they are chewy by just looking at them, thank you sooo much for bringing to the Tea Party yum yum. I will try to make these for sure 🙂 I went to a Convent School also, i went to a few schools but the Convent one being the last. I am Church of England but it was Catholic of course, but it was actually my favourite school, it is closed down now, I wrote to our Sister for years until they moved her and I no longer know where she is or if she is alive. Happy memories though. Happy Christmas to you and your nearest and dearest xxx
