Orange Glazed Chicken and Fruit Skewers -Barbecue and Bonfire on the Beach

Family outings can be real fun, especially when it is a weekend holiday by the seaside with two dozen excited people of all ages. Building sand castles, playing beach volleyball, bonfire parties, barbecuing, surfing, swimming, star gazing, day dreaming, relaxing… name it we did it ,whilst munching on the endless goodies which kept coming out of the picnic baskets. Six families and six baskets…… yummm….  Wasn’t that awesome ??

For once, nobody was peering over mobile phones or laptops, checking their whatsapp messages or inboxes. We were all really presentand not just ‘virtually present‘. No matter how simple or extravagant the vacation, the act of getting together with relatives and doing things together does strengthen family ties. A wonderful opportunity to strengthen the affection and attachment between the members of the extended family by talking to each other, eating together and enjoying together. A vacation to be cherished.

One way to ‘stay in touch‘ and not just ‘stay connected‘.

One of the most  memorable moments was the bonfire barbecue night on the beach when we played dumb charades between rounds of barbecued prawns, fish and crabs.

Even after coming back, I couldn’t get the trip out of my head ( no! no! banging my head wouldn’t have helped). So , the next best thing I could do was to relive those fun moments. I grilled a platter of chicken and fruits. It turned out very delicious. The orange glaze which was mildly spiced brought out a beautiful flair to the chicken as well as the fruits.


 

Orange glaze Barbecue Chicken and Fruit skewers

 


 

What you need for chicken skewers:

  • 4 chicken breasts cubed
  • 2 tbsp. garlic paste
  • 1 tsp. red chilli paste
  • 2 green chillies chopped ( or less )
  • juice of 1 lemon
  • 1 tsp. tomato sauce
  • 1 tsp. chilli sauce ( or less )
  • salt to taste
  • oil as required

Marinate the chicken with these ingredients for at least two hours. Thread the pieces on pre-soaked wooden skewers. Grill in oven or shallow fry. Use metal skewers if you are in the mood to use a charcoal grill. When the chicken pieces are almost done, brush with some orange glaze and grill further till done. Save some glaze to brush before serving.

What you need for fruit skewers:

  • your choice of fruits cubed
  • salt
  • crushed black pepper

Season the fruits with salt and pepper.Thread the fruits onto pre-soaked wooden skewers. Either grill in the oven or preheat an outdoor grill for medium heat and place a large sheet of foil onto the grate.Place the skewers onto the foil on the preheated grill.Grill until the fruit is  almost softened. Keep flipping. Brush with orange glaze and grill further.

Alternate Method:

If you want the fruits sweeter and with a caramelized look, you can sprinkle them with the following ingredients and grill.

  • Brown Sugar as required
  • Cinnamon powder
  • salt

Orange Glaze:

  • 1/4 cup orange juice concentrate made from boiling 1 cup orange juice
  • 1/4 cup honey
  • 1 tbsp. olive oil
  • 1 tsp. zest of orange
  • 1 clove garlic minced
  • 1 tsp. soy sauce
  • 1/2 tsp. crushed black pepper (optional)

Put all the ingredients in a sauce pan and bring to boil over medium heat till the sauce thickens. Brush over chicken and fruit skewers.

  6. Quite a post especially starting out with the bonfire picture! It is cold here and would love to be where you were. The beach, anywhere, is my favorite place to vacation. What fun your family had – memories are important as well as good food. Love the chicken as well – great post.
