Teriyaki Chicken – for a Pokemon fan

We have a new fad at home…Japanese. Thanks to my daughter who is a huge Pokémon fan. So much so she watches Pokémon in Japanese language every Thursday because the Japanese version releases much before the English one. And thanks to that, she has picked up a lot of Japanese words. Her room looks like it was lifted from Pokemon land. Yellow and Red interiors, Pokemon stickers, Pokemon inflatables,mugs,rug,blanket and what not!!!

If that was not enough she  sketches  Pokemon characters whenever she has free time:

And just to humor her, I made the popular Teriyaki chicken.Teriyaki was invented in Japan. “Teri” (照り?) means shiny and “yaki” (焼き?)means grilling or broiling, because the sweet sauce gives a shiny appearance even after grilling.Fish,chicken,lamb or other meats are glazed with this sauce and grilled or broiled. Traditionally, Japanese add Sake / Mirin (kinds of rice wine) to the sauce. But you can still make Teriyaki chicken without them and it tastes just as good. Serve it with steaming hot rice and you have a beautiful Japanese meal.

Teriyaki Chicken

  • Servings: 4
  • Difficulty: easy
  • Print

Ingredients:

  • 12 skinless chicken thighs
  • 1 tbsp. cornstarch
  • 1 tbsp. cold water
  • 1/2 cup white sugar
  • 1/2 cup soy sauce
  • 1/4 cup cider vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper

Method:

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Keep a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let them simmer, stirring frequently, until sauce thickens and bubbles.
  3. Place chicken pieces in a lightly greased  baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
  4. Bake in the preheated oven for 30 minutes. 
  5. Turn pieces over, and bake for another 30 minutes, until juices run clear. Brush with sauce every 10 minutes during cooking.
  6. Sprinkle some sesame seeds if desired.
  7. Serve over steaming hot rice along with the remaining sauce from the baking dish and enjoy.

Tip:

You can make some extra sauce and add cooked rice or noodles to it and saute it in a skillet to make some delicious Teriyaki rice or noodles.

    Her sketches are fabulous! If these were the “old” days, Disney could have hired her to draw the cells in their classic animations. The teriyaki looks really yummy, too! It is very easy to make from scratch; there are so many variations!

    Those are some adorable pokemon sketches by your daughter! It’s wonderful to hear that she’s picking up some Japanese words at the same time as well 🙂 I always preferred digimon to pokemon when I was growing up (I could never figure out whether Pokemon had an actual plotline!)–anyways, I think there may have been a bit of rivalry between the two shows (and their fans!) The teriyaki sauce looks so wonderfully sticky, yum!

      Kids learn a lot from the shows they watch. Rather it’s easier to teach them something new that way. All the more pressure on parents to keep an eye on what they are watching . I cant make head or tail of the Pokemon show though my daughter has tried so many times to describe the characters. I am a Tom and Jerry and Mickey Mouse fan 😉
