“Good things come in small packages’
This is one quote I have never fully agreed all my life,because I am a tall girl π But looks like now I can’t agree more. Well…there are exceptions to every rule π These mini pizza pies which just made way out of my oven are so irresistibly delicious. They smell incredibly good,are crunchy,scrumptious,juicy and melt in the mouth…all at the same time.The pies are made from scratch and baked in the oven for about 10-15 minutes. They are then filled with a delicious pizza filling and Italian seasonings,covered loosely with layers of filo pastry and baked again. The result is a crunchy top,juicy center and a firm yet melt in the mouth base. They are excellent finger food or hors d’oeuvres for a party. The best part is the individual portion size. you don’t have to take the trouble of slicing through a pie and serving it individually. the cup cake wrappers in which you place them ensures that your guests’ fingers stay clean. So, on the whole this is a complete win-win dish for big parties. You can make the filling and bake the pie shells in advance and just do the final baking before your guests arrive.
Mini Chicken Pizza pies
For the mini pie shells:
- 250 g flour
- 125 g butter
- 1 egg
- 1/2 tsp. salt
- 1 heaped tsp. Italian seasonings
- 1 egg yolk mixed with a tsp. of water for brushing
Cut butter into cubes. Make sure it is chilled. Add flour and mix well with your fingers or in a food processor. Add the egg and knead into a smooth dough. Wrap in a cling film and refrigerate for at least half an hour. divide it into 12 portions and roll each one of them into circles so as to fit into the tart/cupcake moulds. Prick the base with a fork and brush with egg yolk. Bake at 180 C for 10-15 minutes.
For the filling:
- 1 cup boiled and shredded chicken
- 1/4 cup sweet corn kernels boiled
- 1/4 cup capsicum chopped
- 1 onion diced fine
- 1 tomato chopped
- salt
- pepper
- 1 tsp. mixed dry herbs (oregano,basil)
For the top cover:
- 3 spring roll wrappers or puff pastry
Put oil in a wok and saute the onions till translucent. Add capsicum,chicken,corn and tomato. Season with salt,pepper, herbs and pizza sauce. You can add some tomato ketchup to the filling.
Take 3 springroll wrappers and brush with butter. layer them one over the other.Cut into 12 squares. Cover the filled pies with these square strips and tuck loosely.
Brush with egg yolk and bake for 10 minutes or till top is golden and appears crisp. You can use puff pastry instead of spring roll wrappers if it is available with you.

Wow skd you’ve hit it out of the park with this one! I just love dishes that I can serve for guests that they can just pick up and mingle. This one does all of that. I can just imagine how good your kitchen smelled while this one baked!

Cooking for me is mostly about aromas and flavors. And I go weak in the knees whenever there is a gorgeous bread baking in the oven. There is a bakery kitchen close to the place where i live and you can just imagine the aromas wafting out at different times. You can tell when the cookies are baking , when the breads and when the cakes are. Its just beautiful.

Now how did I miss this one? Love recipes like these, the smaller portions and the presentation, they would go really fast at a cocktail party I’m sure. Thanks for the link on the uses of tumeric too. I’ve read more and more about its benefits, definitely useful information to bookmark.
