Mexican Churros (fried and baked) and my Churro song

wpid-picsart_1445154065712.jpg

                    My Churro Song

Rushing to that corner shop

Giggling all the way

Pushing open the glass door

Breathing in the air

Wafting smells of coffee and churros

I remember till this day.

Scrambling to catch the corner seats

While some friends bring the tray.

Chatting over steaming cups

Was how we met every Friday.

Swirling slender fritters in chocolate

Catching up on the week gone by

Gathered sweet memories which

I remember till this day.

Till one fine day we couldn’t meet

As everyone went her way.

Aromas and flavours from those days

Linger till today

If you are reading this my dear friends

I will make for you some churros.

Let’s catch up on the years gone by

Let’s meet up once again

Relive all those fun filled moments

and tastes of yesterday.

Dear friends and readers,As you  all know I am not a poet so please excuse my attempt at poetry. It’s just that I made some yummy churros and they turned out so well that my heart broke out into this song   🙂

Actually certain aromas and flavors trigger  memories of wonderful days gone by. They instantly take you down memory lane. Scrumptious, hot, cinnamony, sweet churros are one such food. I am sure every one of you has their own churro memory from childhood. Though the origin of churros is unclear, they are believed to be from Spain. They are usually fried either straight or curled, dusted with cinnamon sugar and served with hot chocolate sauce. I learnt that there is a difference between churros made in Spain and those in Mexico. Spanish ones are vegan and have olive oil in them whereas the Mexican churros are made with egg and butter and are sweeter.

The dough is very easy to make. After it is made it is transferred into a  churrera, a syringe with a star-shaped nozzle. We can use a pastry/icing bag with a star shaped nozzle. I fried half of them and baked the rest. Both tasted very good. I found the baked ones a little crunchier. You can try both and decide which ones you like better.

     Recipe: Mexican Churros-fried and baked

Step 1:

Making the dough: In a saucepot put 1 cup water, 2 1/2 tbsp. sugar, 1/4 tsp. salt, 1/2 cup butter, 1 tsp. vanilla and bring to a boil. Add 1 cup sifted flour and keep stirring till the dough comes together. It should take about a minute. Make sure it is lump free. Take off heat and add 3 eggs one by one, whisking all the while.

Step 2:

Piping and frying: Spoon in the dough into a pastry bag fitted with a star nozzle. Pipe in about 6-inch strips of dough into medium hot oil and fry till golden brown.(Note: Use a thicker pastry bag as the plastic one can split open while piping)

Step 3:

Sugar dusting:Combine 1 cup sugar with 2 tsps. ground cinnamon.Toss in the hot churros, tossing to coat. Serve with chocolate sauce.

Baked Churros

After Step 1, pipe long strips of dough on a baking tray lined with greased baking paper.  Spray churros lightly with cooking oil.Bake in the oven 200C (392 degrees Fahrenheit) until they look crisp and golden. It should take about 10-12 minutes.

Step 4:

Hot chocolate sauce:Melt 3 1/2 ounces chopped chocolate in a micro wave.Warm 1/2 cup heavy cream in a small saucepan. (Do not let it boil.) Pour the heavy cream over the melted chocolate. Stir to combine. Serve hot or warm.

Anyways I am taking these yummy delicate churros to share with my Fiesta friday friends. I hope Angie keeps a work station for me so that I can serve them hot.Joining her are two amazing co-hosts – Juju @ cookingwithauntjuju and Indira @ I’ll Cook, You Wash

They are very light and airy Linda besides being yummy. So stopping at one is next to impossible. But they have to be served hot because they tend to become soft after an hour. Thank you for liking it ☺ 👍

Thank you Freda. It was haphazard and spontaneous. So i just jotted it down. Wasn’t sure if I should post it 😉 But I am so glad to know you liked it. The churros were crunchy to bite and soft and light inside. The sugar and cinnamon dusting made the texture grainy. In the whole a delicious snack meant to be eaten hot.

Thank you so much Fae for appreciating my Churros after trying the original Spanish ones. The Spanish don’t use egg in it right? I think they stay crisper for a long time. The baked ones turned out surprisingly very good. One guilt free snack in my kitty.

I cheat when I blog. I’ll make twelve cupcakes, and then decorate them four different ways. That way I get four blog posts out of one batch, instead of eating 4 batches of cupcakes. But, then again, my neighbors like when I bake a lot because they tend to reap the rewards.

The baked ones turned out quite good Sandhya. But one little bit I thought I will remember next time. The cinnamon sugar could be sprinkled in the last couple of minutes in the oven or when they are hot and just out of the oven so that it sticks to the churros.

Your churros look delicious, I love it that you can bake them in the oven. They look very similar to the chichis we get here in France, we love to buy a cone of chichis with a pot of hot chocolate & walk along the beach eating them, a real treat. Now I’ll be able to bake my own, thanks for sharing 🙂
