How many times has it happened to you that you see an amazing recipe but you cannot try it because you don’t have that one ingredient. Ofcourse you have the option of ordering it online and wait for it to arrive, but by the time it is at your doorstep you lose that inclination for the dish and probably want to try something else. Pomegranate Molasses is one such ingredient which made me give up on some very interesting recipes. I couldn’t get hold of it in my local stores. It was then I decided to try making it at home. It is much simpler than I thought it would be. It can be easily made and stored in an air-tight glass container in the fridge.
Pomegranate Molasses
Ingredients:
- 4 cups pomegranate juice (5 medium pomegranates)
- 1/2 cup sugar
- 1/4 cup lemon juice
Make juice from 5 medium pomegranates and strain it. It should be 4 cups. Reduce or increase the number of pomegranates according to size. Just remember the strained juice should be 4 cups.
Pour the juice in a saucepan along with sugar and lemon juice and bring to boil. Then lower heat and simmer uncovered till the juice reduces to a ketchup consistency.
It should reduce to 1 cup. Take off heat, cool and store in a glass jar in the fridge. It should stay for months in the fridge.
Pomegranate has an impressive nutrient profile and immense health benefits.It is known to lower the risk of heart disease, blood pressure, fight arthritis,joint pain,cancer,helps improve memory and has anti-inflammatory properties. So why not include pomegranate in our daily diet.
There are so many different ways we can use Pomegranate Molasses:
- Soups: Just add a tablespoon or two to any vegetable, chicken or lentil soup and see the depth it gives to your soup or stew.
- Salads: Make a salad dressing with pomegranate molasses, olive oil, salt, pepper and herbs of your choice and toss it on your salads.
- Dips: You can make some interesting Middle-Eastern dips by adding a tablespoon of it to hummus or baba Ganoush. You can make Muhammara (stay tuned for the recipe). You can add it to yogurt or mayonnaise and add seasonings of your choice.
- Spreads: This time ditch your favorite jam and spread the molasses on a slice of bread. Or simply drizzle your pancakes or waffles with it and enjoy a healthy breakfast.
- Grilled Fruits: Dribble some molasses on your skewered fruits and grill them.
- Marinade: It works well on most meats and vegetables. Mix some molasses with the regular marinade and use it to roast,grill or fry. Adds a beautiful glaze and taste.
- Desserts: Instantly spice up a dull dessert with a drizzle of Pomegranate molasses. Make an instant sundae with scoops of your favorite icecream,chopped seasonal fruits and nuts and drizzle some molasses over it.
There are so many different ways you can use this magical ingredient. So don’t wait to find yourself a jar, just go ahead and make it..

Lucky that you got the bottle Trupti. It wasn’t available in my local store which generally stocks all kinds of international spices and ingredients. there was sumac, zatar but no molasses sadly.

I found an eggplant recipe when I was badly craving and I found pomegranate molasses as one of the ingredients. I am not sure if I have saved the recipe, but at least I have the recipe of the molasses now. 😀

I know Jhuls. it is really frustrating When we want to make something it should be done while the craving lasts 😀 By the time we get hold of those ingredients usually the craving magically disappears. Surprisingly it is so easy to make, I regret not having tried it before. I would love to see your creative dishes with the molasses 🙂

Thanks for the how-to. I see molasses and juice all of the time but rarely see pomegranates at a reasonable price. I’ll look harder now. I’d like to see if homemade is better than manufactured.

Pomegranates in my city are easily available and at a very reasonable price. So it is very economical to make it at home plus the satisfaction of skipping the preservatives which come free with the store bought one.

Very nice and useful recipe, SKD. Pomegranate molasses/concentrate are big in Persian cuisine, especially to make ‘fesenjan’ with it. 🙂

wow I buy the stuff, but I love the colour of yours — back when I couldn’t buy it here I would bulk import in my suitcase from San Francisco together with peanut butter (which always ensure my bags were searched..)

Wow thanks for all these great ideas for using pomegranate molasses. I’ve used it one Thanksgiving for glazing the turkey and used some in homemade cranberry sauce and everyone loved it. I’ve used it in salad dressing as well but now thanks to you I’ve learned more ways of using it in future.
