Recipe: Chicken Pita Sandwich

Ingredients:

  • Pita bread                                :  4
  • Chicken boneless cubes    :  400 grams
  • Sweet corn kernels              :  1/2 a cup boiled
  • Bell pepper chopped           :   1/2 a cup
  • Cucumber chopped             :   1/2 a cup
  • Tomato chopped                  :   1/2 a cup
  • Iceberg lettuce                      :   8- 10 leaves
  • Salt                                             :   to taste
  • Red chilli powder                 :  1 teaspoon
  • Ginger garlic paste               :  2 teaspoons
  • Vinegar                                     :  2 teaspoons
  • Tandoor masala                   :  1 teaspoon ( optional )
  • Oil                                               :  1 tablespoon
  • Mayonnaise                            :  1/2 a cup
  • Pizza sauce                              :  1/4 cup
  • Cheese spread                        :  1 tablespoon
  • Pepper powder                      :  1/2 teaspoon

Method:

  1. Marinate chicken with salt, chilli powder, ginger garlic paste, vinegar, tandoor masala, oil . Place in a non-stick pan and cover it with a tight lid. Cook on low heat till dry.
  2. Add bell peppers and saute for a minute. Take off heat. Add cucumbers and tomatoes. Season with salt and pepper. Add mayonaise, cheese spread and pizza sauce.
  3. Heat a pita bread on a griddle .
  4. Cut into two halves.
  5. Line each half with lettuce leaf and spoon in some chicken stuffing.
  6. Eat while still warm.

Cooking tip :

You can use roast chicken or any left-over chicken shredded.
