Recipe: Aromatic Chicken Roast

This is a non-spicy easy to make chicken recipe. Its aroma and flavor is sure to appease your palate.

Ingredients:

  • Chicken                                       :  1 whole with skin
  • Lemon                                         :  2
  • Salt                                                :  1 tsp
  • Pepper                                         :  1 tsp freshly grounded
  • Onion paste                               :   2 tablespoon
  •  Garlic paste                              :   1 tablespoon
  • Butter                                          :   50 grams
  • Rosemary                                  :  1 sprig
  • Coriander                                   :  1 sprig
  • Mint                                              :  1 sprig
  • Potato                                          :  2 medium

Method:

Rub the chicken with salt, pepper, juice of one lemon. Strain the onion paste and garlic paste through  a sieve and add the juice to the chicken. Let it marinate for a couple of hours.

Grease a baking tray and line it with potato slices. Place the chicken over the slices.Stuff its cavity with the fresh herbs and whole lemon. Smother with butter above and under the skin. Roast for approximately one hour at 180 degrees centigrade till the skin is crisp.

  1. You certainly seem to eat a lot of chicken! I do too. They are so versatile and nearly every cuisine uses them. It is very handy to have so many options on the one site.
