
If you are planning an all girls party for your little girl with a Pretty Pink theme , try baking these easy to make cupcakes. They turn out not only delicious but sit very pretty on the table. Stand back and watch those squeals of delight and the oohs and aah s , as your girl shows them off with pride to her friends from school and the neighborhood. I have baked cup cakes so many times before. but this is the first time, I tried my hand at fancy icing. This time I used cream and sugar icing keeping in mind the guests but next time I will try the butter cream frosting for a stiffer icing.
For the Cup cakes: ( makes 10-12)
- 110 g Butter at room temperature
- 125 g castor sugar
- 110 g flour
- 2 eggs at room temperature
- 1 tsp. baking powder
- 2 drops pink food color
- 1/4 tsp. lemon zest
- A few Strawberries or cherries chopped
Beat the butter and sugar well. Add eggs one by one and beat again. Sieve the flour and baking powder and add to the egg mixture little by little. Add the zest and the color. Spoon the mixture into silicon or any other greased cupcake molds . Insert a chopped berry in the middle.
Bake at 180 º C for 20 to 25 minutes till a knife comes out clean. Cool on a rack.
For the Icing:
- 2 cups whipping cream
- 3-4 Tbs. granulated sugar
- 1 tsp. vanilla extract
Chill the bowl and whisk attachment for 5 min. in the freezer. Pour the cream into the bowl and whisk on high speed until it just starts to thicken. Slow the speed down to medium and pour in the sugar little at a time. Continue to whisk until soft peaks form. Add the vanilla extract and continue to whisk by hand until the cream is smooth, and stiff peaks form (the cream will stand up straight when the whisk is raised). Brush the inside of an icing bag with pink color and fill in the cream. Pipe from the center to the outside. Decorate with silver balls or confetti.
