
Sorry for the weird title friends. but it’s not my fault. My son challenged me to do that. I will tell you what happened.
Flashback:He is at a university far away from home. Usually as in all business schools,sometimes the work load gets really hectic with too many deadlines to be met at the same time. During these times, meals are an option and sleep a luxury for all the students. Recently, when I called him, he was caught up in some work quite oblivious of the fact that the lunch time had passed by.
And like all worried mothers do , I told him, “What ever the work don’t skip your meals…whatever the assignments make sure you catch some sleep…whatever the schedule don’t forget to call me….”
And with a laugh he said, “Mom!! You use so many whatevers in a breath you could almost put up a post titled ‘What Ever‘ “.
I said,with my mind still on the lunch he had missed,”Maybe, why not”
With an amused tone in his voice he said,”Ok Mom. I challenge you to do that”
And without thinking I accepted the challenge.
He dissuaded me.(I have to add here that this blog was conceptualized, designed and started by him for me) “Mom!You are not serious,Are You? Think about all your friends and readers.What are they going to think about you..suppose they don’t read your post because of the title..”
With a mission in mind I said,”Don’t worry. I will take up the challenge. But the deal is that you are not skipping a meal from now”
In a little skeptical tone he said, “make it a week”
I said,”Ok deal! You are not skipping a meal for a week if I write a post titled”whatever” “
Phew! What ever! That’s how this post was born. All my blogging friends must be laughing for sure. It sounds absurd but a challenge is a challenge and I have to complete it 😉 . Don’t you agree mommies 🙂
Today:This is a recipe for the delicious kataifi chicken I just made. You can make it with kataifi or vermicelli. What Ever 😉 you have. It is very simple to make. The chicken strips are first marinated in basic spices. You can use the ones I used or Whatever 😉 fancies you. Then it is crumb coated with kataifi. as you all must be knowing Kataifi is shredded phyllo pastry

If this is not available you can use thin roasted Vermicelli. The chicken strips are then deep fried. You can alternatively, brush them with some oil and bake them , What Ever 😉 you like. I like the fried version. It is much tastier. Crisp on the out side, juicy and tender inside.
Recipe: Kataifi or Vermicelli Chicken
What Ever you need for Marination:
- 12 chicken strips from 3 chicken breasts
- salt to taste
- 1 teaspoon red chili powder
- 1 tbsp. Worcestershire sauce
- 2 tbsp. vinegar
Mix the boneless chicken strips with the other ingredients and thread them each into pre soaked wooden skewers. Keep in fridge at least for 4 hours.Because we need the chicken to tenderize during marination. can’t fry them for a long time because the kataifi browns very fast.
Crumbing:
- 1 cup flour or less
- 2 eggs
- 3-4 cups kataifi or vermicelli
- Oil for deep frying
Dust the skewered strips with flour. dip in egg then in the kataifi. Keep in fridge at least for half an hour.
Remove from fridge and deep fry. Take care . They should be golden brown or slightly red brown and not darker.
Serve with Schezuan chutney (store bought) as I did or with any other dip. WhatEver 😉 your kids like.Enjoy while I call my son….

Ha! It would take a heck of a lot more to keep your friends from following your but…whatever! How many times have we heard youngsters say this? This chicken sounds delicious with this marinade, and I love the crunch that the kataifi would give it.
