Chicken Ravioli, deliciously low calorie dish……..

An all in one dish for one of those days, you wouldn’t want to add lots of calories to your diet. Stuffed with chicken, corn and veggies it can in fact turn out to be nutritious.

Ingredients for the filling:

  • boiled peas  / corn                                    :  1/4 cup
  • shredded chicken/ minced meat       :   2 cup boiled
  • capsicum                                                      :   1/4 cup
  • green chillies                                              :  2 finely chopped
  • onion                                                              :  1 grated
  • oregano                                                         :  1 tsp.
  •  chilli flakes                                                 :  1 tsp.
  • tomato ketchup                                         :  1- 2 tbsp.
  • mint and coriander leaves                    :  2tsp. finely chopped
  • salt and pepper                                          :  to taste
  • Oil                                                                    :  1 tbsp.

In a pan put the oil and saute the onion, veggies and chicken. Add the rest of the ingredients and saute for a couple of minutes. Keep aside.

Ingredients for the sauce:

  •  crushed tomatoes          :  3
  • garlic clove                        :  2
  • coriander leaves              :  1 tsp.
  • tomato ketchup               :  2 tbsp.
  • salt                                         :  to taste
  • sugar                                     :  1/2 tsp.
  • onion                                    :  1 small chopped fine
  • mint leaves                        :   1 tsp.
  • oregano                               :  1/2 tsp.
  •  cheese                                 : 1 cube grated
  • Oil                                          : 1 tbsp.

Saute onion, garlic and tomatoes in oil. Add the rest of the ingredients and cook for a few minutes. Keep aside.

Ingredients for the dough:

  • All Purpose flour             :  2 cups
  • Eggs                                       :  1
  • Salt                                         :  1/2 tsp.
  • Olive oil                                :  2 tbsp

Mix the ingredients with enough water to make a smooth pliable dough. Divide into two portions and roll out each of them one after another. Cut out evenly sized squares ( or discs if you wish ). Put a teaspoon of filling on each square . Wet the border with some water and cover with another square. Seal the edges well.

Fill a large pot with water and boil with a little salt and a teaspoon of oil. Gently lower each ravioli into the water and cook till they float on top or they turn transparent. Remove from water and arrange on a plate. Top with sauce and serve hot.
