

This juicy smoked lamb recipe can be tried in your kitchen on those days when you have the mood for a barbeque but the weather just wouldn’t let you. But you can indulge your hunger pangs by trying this , no hassle aromatic dish right in the comfort of your kitchen. All you need , besides the marinated mutton that is, is a pan and a piece of coal.
First things first….
Ingredients for the marinade:
- Boneless mutton cubes : 500g
- Onions : 2 finely sliced and fried crisp
- Ginger paste : 2 tsp.
- Garlic paste : 2 tsp.
- Plain Yogurt : 2 tbsp.
- Raw Papaya paste with peel : 100g (or pineapple paste)
- Salt : to taste
- Paprika/Red chilli pd. : 1 tsp.
- Coriander powder : 1 tsp.
- Black pepper powder : 1/2 tsp.
- All spice powder : 1 tsp. (optional for those who don’t like it spicy)
Marinate the mutton with the ingredients and leave for a couple of hours. This will not only help the mutton soak up the flavors of the spices, but also the papaya paste starts working on the mutton and tenderizes it.
Thread the mutton onto wooden skewers which have been soaking in water. This prevents the skewers from burning. Heat a tablespoon or two of oil (whichever your calorie chart permits you lol ) in a non-stick pan and place the skewers on it. Cover with a lid and cook on slow fire, turning in between. While the lamb is cooking, heat a piece of coal on the stove.
When the lamb is done and the marinade has dried up, place a piece of aluminium foil or a small steel bowl right in the centre of the pan. Place the hot coal onto the foil and pour a teaspoon of oil or butter onto it. Cover the pan with the lid immediately and leave for a while till the mutton is flavored with the smoke.
Serve with onion rings and cucumber slices. This dish goes well breads or rice.
