
When you feel like eating something special, something really yummy, something different , go for this all in one dish. The marination and the cooking process make the chicken breasts very succulent and juicy. Though not difficult to make, it is a dish one must make in leisure. The flavors are very gentle on the palate, but lip smacking…
Ingredients for marination:
- Chicken breast 4
- Ginger garlic paste 2 tbsp.
- Chilli powder 1 tsp.
- Salt to taste
- Cloves 2 ( ground )
- Cinnamon 1 inch( ground )
- Cardamom 2 (ground)
Flatten the chicken breasts by pounding on them gently. Marinate in the spices above for at least an hour.
Time to stuff ’em up..
Ingredients for filling:
- Ricotta cheese/Khoa 50 g
- Onions 75 g chopped
- Ginger 10 g grated
- Green chillies 2 finely chopped
- Corn kernels 1-2 tbsp.
- Salt to taste
- Lemon juice 1 tsp.
- Coriander leaves/cilantro 1 tsp. chopped
Mix them all up. And divide into four portions. Place a portion of the filling on one side of the chicken breast and tightly roll it up. Place all the chicken rolls on a greased oven tray. Brush with oil and cook in the oven at 300F.
You can make the dish richer by using raisins in the filling. That’s optional by the ways.
Serve this hot with white sauce.
Get the White sauce right:
- Butter 2 tbsp.
- All purpose flour 2 tbsp.
- Milk 1-2 cups
- Salt to taste
- Pepper powder to taste
- Oregano (dried) 1 tsp.
Melt the butter in a pan. Add the flour and saute lightly. I would ideally use half the amount of butter. Add the milk and cook till a smooth thick consistency of sauce is formed. Add the seasonings.
Pour over the cooked chicken rolls and serve hot. Enjoy…….
