Cocktail Pudding : Lazy Man’s dessert

After shocking most of my blogging friends and causing fainting spells on at least one of them 😉  with my previous post, Brain Fritters ( I am striking it out, lest she be reading it and god forbid faint again), I decided to make it up to them by bringing in a dessert 🙂 

I call this a lazy man’s dessert because there is nothing much to do. You just need to have a couple of things in your pantry/fridge and start assembling . In no time, you have a beautiful dessert ready. Absolutely no cooking or standing in the kitchen(This recipe was shared by my sweet sister-in-law ). I was out of town last week and I had to host a party for my hubby’s cousins who had flown in from LA, on the day I returned. I didn’t have much time for an elaborate dessert, so I whipped this up. 

What you need to have:

  • 1 tin of mixed cocktail fruits
  • 1 cup of any fresh fruit chopped ( bananas/apples)
  • 1 liter Vanilla icecream
  • 1 large packet milk biscuits crushed
  • 1 tin Rasgullas  (easily available at all Indian grocery stores)
  •  100 g Sweet chocolate grated

Rasgullas are soft spongy balls made of cottage cheese and soaked in a chilled light sugar syrup. So just take the rasgullas from the tin and gently squeeze out the syrup from each one of them and place them in a big mixing bowl. Break them into small pieces with your fingers. Add the crushed biscuits and fruits. Mix them all.

 

Add the slightly softened, but not melted ice cream. Transfer this mixture into a serving bowl. Top with some crushed biscuit crumbs , grated chocolate and some cherries. Keep it in the freezer. Take it out of the freezer an hour before you want to serve. Enjoy this cool and delicious dessert…..

  1. Hah I wonder who fainted! I have never heard of Rasgullas I wonder if they sell that here. Also I couldn’t work out what the meal was as your cherries look like cherry tomatoes over here lol, but itsounds v easy to make and if i get to find some Rasgullas I will try it..i still wonder who fainted!!!

    1. Yeah, I am wondering too 😉 . But one thing I know is it set me on a panic mode lol
      I think the cherry tomatoes got their name because they look like cherries. The ones I used are tinned cherries.You will very easily get Rasgullas at any Indian grocery or sweet store. Try to get a tin when you go out shopping next time 🙂

  2. Hi, I am visiting your blog for the first time. I have recently started bloggin.loved your pudding, especially for the fact there. Is nothing much to do.. Just bring everything together, assemle and serve.. Also, I noticed rasgullas in it.. Never even thought of using rasgullas in pudding.. Awesome work..:)

  3. Hi. Was just browsing for new dessert recipes for ramzaan n noticed this. Do u mix the vanilla ice cream in the mixture or just layer it over the top?? Also do u cover the dish with sumthing 2 prevent it darkening whilst freezing it? Thanks x

    1. Hello! Ramadan Mubarak to you. This is a delicious quick fix dessert. We mix the icecream with the other ingredients. It doesn’t darken when we freeze but you can cover it with a cling film if you like. It has to be taken out of the freezer atleast 15 to 20 minutes before serving. I am sure you will like the dessert. Do give it a try 👍☺

    1. You can keep it for a long time even a couple of weeks . I cover it with cling film in individual bowls and keep it in the freezer. Just thaw a bowl or two when needed.
