
Once in a while, we all suffer from ‘ Lazy bones syndrome ‘ , when we just don’t feel like cooking something elaborate. The thought of thawing your poultry, dicing the veggies,the Mise en Place could sound boring. On one such night, when I had to rustle up something for mine as well as a couple more hungry tummies, I made these not so humble omelettes, stuffed with the easiest possible filling and served them with elan. Ever since I started this blog, my family and friends expect I will churn out some exotic dish every time I enter the kitchen lol .No humble offerings accepted. Even a simple dish is supposed to look like it had a make over..Not that I complain, but whenever my eyebrows try to knot up, I hear a chorus ” but you are our blogger mom” 🙂
Fluffy Omelette:
- 4 eggs
- a tbsp. of sweet corn kernels
- a tbsp. of chopped bell pepper
- left over chicken shreds and cheese (optional)
- salt
- pepper
- 1/4 tsp. dried oregano
- 1 tsp. of oil or butter
Separate the egg whites and the yolks. In a dry glass bowl whisk the whites till soft peaks form. Whisk the yolks separately and add the seasonings. Gently fold into the whites. Brush a non-stick pan with oil and gently pour in the egg mixture. Place the corn and bell pepper ( chicken and cheese if you wish) on the egg mixture. Cover and cook on low heat. When done on one side, fold into half and serve immediately.

Yes, that is one fluffy omelet but, to be honest, it’s the addition of corn that caught my eye. What a great idea!

Thank you ., The best way to eat eggs after your workout is to mix five egg whites with one whole egg. You could use the same recipe with 5 egg whites and a whole egg.
